Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons baking powder
½ teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted
1 large egg
1 tablespoon vegetable oil
Assorted toppings
Directions:
First, whisk together the egg, milk and butter in a medium sized bowl until well blended. Next, mix in the dry ingredients until well moistened. If you have small lumps in the batter, that is fine. Heat up a skillet to medium heat and add one tablespoon of oil to prevent sticking. Add the batter onto the pan to desired pancake size. Cook until bubbles start to form on the surface, then, using a spatula, flip the pancake over. Continue to cook until browned on the other side. Serve warm, with desired toppings and drenched in love.
