Watermelon salad, a favorite this year, will help keep you cool and totally refreshed in the summer haze. Here’s a recipe that’s so easy, you’ll whip up your own watermelon salad in no time.
Here’s what you’ll need to serve 10 of your friends:
1 small red onion, thinly sliced
2 tbsp. lime juice
2 tbsp. olive oil
1 seedless watermelon, cut into cubes
3 baby cucumbers, cut into cubes
1 cup feta cheese
1/2 cup mint leaves, thinly sliced
Follow these directions, and your refreshing watermelon salad should be ready in about 25 minutes.
In a small bowl, combine the lime juice and thinly sliced red onions, then set it aside to marinate for about 10 minutes before adding olive oil to the mixture.
Meanwhile, in a large bowl, toss together the watermelon, baby cucumbers and feta cheese until the mixture is evenly distributed.
Then pour the red onion, lime juice and olive oil mixture over the watermelon mixture, and mix evenly. You’ll want every piece to get covered!
Before serving, sprinkle mint over the salad as a garnish.
